    Coconut-Banana-Berry Goodness: A re-creation from MovNat week

    Well it has been a little while since I posted anything new due to many factors including being away for a week in the woods of West Virginia with Erwan LeCorre for a MovNat expansion course late July.     If you've read the above links one thing that stands out is the food. It was all paleo and meant to be calorie dense due to the majority time spent during the day doing various forms of high energy expending movements and exercises. There are a few reasons why I think the food was important part of the MovNat week. Easily the first reason was the taste, Erwan and Vic's preparation were spot-on and I enjoyed hanging around and helping with all the meals in hope of picking up some new ideas. Well, I picked up more than I could retain and I tried to write down all the things I wanted to try and recreate, more on that coming up soon...The other reason the meals were important to the MovNat week is just that, they were meals. I mean this in the way that everyone pitched in from prep to cleanup, be it schlepping up the hill to fill the water buckets to Nick being the scrambled egg savant. When all is said and done we all sat down together and shared stories, various triumphs and defeats, exchange of information on all things paleo and exercise related, and sometimes just recalling many of funny things that happened throughout the day. It definitely was one of the main factors in our group melding together and becoming our own little MovNat family.

    So today I'm going to share a simple recipe that was easily one of my favorites from the week. Served during breakfast but I've found it a great dessert too. I've tried a few inspired variation that'll share too, so let's get to it.

    What you need (1 serving):
    1 banana
    3/4 - 1 cup of fresh blueberries
    1/2 cup fresh blackberries
    1/2 can (13.5oz) coconut milk
    sliced almonds

    I happen to have a farm really close by with fresh "pick-ur-own" berries which is really nice, so I went out one Saturday morning and stocked up as you can see here:

    So this is almost as simple as making ice or toast, slice up the banana...

    add in the blueberries and blackberries...

    pour in the coconut milk, mix it up, and top with a handful of sliced almonds! Simple and delicious...

    Variation: A little more dessert-y...
    This one was suggested by Twitter friend Brett Curtis (@dashnu):
    What you need (1 serving):
    1 banana
    3/4 - 1 cup of blueberries
    2 - 3 tbsps of almond butter
    1 tsp maple syrup
    1/2 can (13.5oz) coconut milk

    Same idea, add it all together in a bowl and mix...with the addition if the almond butter mixing is alittle more important but worth it, tastes really good....top with sliced almonds or whatever your favorite nut is! 

    Another Variation: also a little more sweet...
    This one was suggested by Twitter friend Nick Hamilton and fellow MovNat'r (@nwhamilton):
    Try some cinnamon and coconut nectar (or honey) on top of that berry/bannana mix. We have it with breakfast regularly.
    really good....top with sliced almonds or whatever your favorite nut is! 

    Another Variation: for the chocolate fan!

    Also good with cocoa powder or raw cacao nibs!
